Brewing in Varmia and Masuria has a very long tradition. It dates back to the beginning of the West-European colonisation of the Prussian land. Over the centuries it was a branch of townsmen craft. Along with guild abolition and the introduction of craftsmanship freedom it got a new foundation of development. The technology changed with time and there followed a slow transformation of brewing from craftsmanship into a branch of industry.
The production of traditional and regional beer lost out to mass production. Thanks to the cooperation between historians and brewers traditional regional beer is now regenerated. Thus house brewers, hobbyists, historians and lovers of the hop beverage contribute to the revival of this wonderful tradition of the region.
The Brewery Ukiel Olsztyn
The craft brewery is usually a small manufacture, set up mostly by house brewers aiming at producing high-quality beer without any haste in order to offer new experiences. Innovation, flavour and a sublime recipe are more important than quick and big profit. The brewery „Ukiel” was set up with passion. Maciej Uszpolewicz and Leszek Gałaszewski are two house brewers, who have turned their hobby into a business and decided to produce house-made beer on a large scale.
They began to make beer professionally in October 2017. On the small space of 130 km² they put up a professional brewery, which enables them to produce 500 litres of beer at one go. Additionally, the brewery house is equipped with 7 fermentation containers and a small bottle line. Soon beer from the brewery “Ukiel” will be available in restaurants, hotels, and shops of the region.
The passion of the founders is one of the main strengths of the brewery. Two hobbyists, who do not come from the commercial brewing industry, manage the entire process from start to finish, including labelling the bottles. It guarantees quality and strict control of the production. These two brewers contribute to the growing beer revolution and offer high hoppy beer using American types of hops of citrus, pineapple, lychee and mango flavours. In addition, they do not forget about beer lovers of the old classics like pilsners, stouts, and lagers.

The Brewery Warmia Olsztyn
The brewery Warmia recommends unique non-filtered beer which is not pasteurized and brewed only by means of natural methods (without techniques speeding up the process and without ingredients which reduce the price and quality). The best ingredients, imported from Polish manufacturers as well as from the furthest corners of our globe, are used for the brewing process. Beer from the brewery is not filtered (thus it is healthier and tastier) and not pasteurized (it, therefore, has a shorter expiry date and a better, richer aroma). Beer manufactured in the brewery win medals in Poland and abroad.
The variety of beer brands available at the brewery is worth mentioning. Apart from traditional beer brands like Pils, Pszeniczne, Koźlak, Porter, Grodziskie, Stout, Marcowe…. there are brewery products such as Kveik (traditional Norwegian beer), Mokra Szyszka (brewed once a year from fresh hop cones), American IPA, American Pale Ale with tea, Russian Imperial Stout, Milk Stout with coffee, Old Ale aging with oak wood. The Brewery in Elblag
The brewery in Elbląg was set up in 1872 as „Elbinger Aktien-Brauerei” (The Joint-Stock Company - Brewery Elbląg). The brewery was taken over by the company „Brauerei English Brunnen” (the English Brewery Spring), which produced beer under the same name till 1945. Since1998 it belongs to the Group Żywiec S.A., which is a part of the International company Heineken. The brewery in Elbląg won numerous prizes: for the best brewery Heineken in 2009 in East-Central Europe.
Additionally, it is one of very few Heineken breweries worldwide which has been awarded the Bronze Prize TMT (Total Productive Management), the highest TPM award in Heineken. The most important brand of the brewery of Elbląg is Specjal. It is inseparably connected with North-East Poland. Moreover, it is the biggest regional beer brand in Poland and one of the biggest in Europe. On the steady offer of the brewery, there is Specjal Jasny Pełny. The brewery Kormoran in Olsztyn has been operating on the market for 25 years. Since its beginning, it has been strongly connected with Varmia and Masuria. This brewery derives power and inspiration from the region, where most ideas for creating new types of beer and, above all, most top quality local ingredients come from.
The brewery Kormoran has been specialising in beer brewing in accordance with a long-lasting tradition. Only natural ingredients are used. All procedures are conducted in tune with nature.
